Hi! This vegan cheesecake recipe is: Quick, easy, low in calories, full in protein & vegan! I can recommend this recipe for those who’d like a last-minute dessert but still want it to be a bit healthier because: You don’t need to add any industrial sugar if you don’t want to. Enjoy!


Ingredients
- 400g vegan Skyr
- 1 tbsp lemon juice
- 1 package of vanilla pudding powder
- 3 tbsp sugar (or Erythrit)
- some fruits of choice
- (opt.) some vanilla/lemon zest
You can use any kind of fruits, I decided to add some frozen blueberries on top. But fruits like cherries, clementines are yummy as well.
Extra tip:
Before you pour the mixture into a mold, make sure to grease it a little bit with some vegan butter or oil.
Step by Step Instructions
Step 1
Mix the dry ingredients together and add the vegan skyr and lemon juice.
Step 3
Pour the mixture into an ovenproof mold and add some fruits on top.
Step 2
Now you can add more vanilla or lemon zest if you like so. I added more of both.
Step 4
Put it in the oven at 180*C for 20 minutes. Let it cool and eat it! 🙂
