Hi! Christmas is over and I feel like having a nice fresh salad made of carrots and apples! This one’s perfect as a side dish or just for eating it as it is. It’s great that you can store it in the fridge & is even better to eat later! Again: Quick, easy, healthy AND delicious! 😉
- 250g carrots
- 150g apples
- 1/2 tsp salt
- 1 tsp sugar
- some pepper
- 1 tbsp lemon juice
- 3 tbsp balsamic vinegar
- 1 tbsp oil
- 1-2 tbsp water
You could also only use carrots instead of carrots and apples but the sweet and fruity taste of the apples really matches the carrots.
I personally like putting some nuts or herbs such as walnuts & chives, on top of the salad!
Step by Step Instructions
Peel the carrots and apples if you want so and mix the liquid ingredients in another small bowl.
Place the grated carrots+apples in large bowl and pour the dressing over it and mix it very well.
Now grate the carrots and apples with a machine or with a grater by hand.
Put it in the fridge, let it sit & cool down or just eat it straight away with some toppings!
