About this Recipe

Hi! These muffins are fluffy, simple to make and sooo delicious. I’m a huge fan of lemon loaf cake and lemon muffins etc. So I wanted to make myself a vegan version of it. I literally fell in love with them once I tried ’em! A coffee break with one of those muffins sweetens your day!

 

Ingredients

  • 0.5 pk baking powder
  • 1/2 organic lemon
  • 2 tbsp vinegar
  • 100 g margarine
  • 200 g of flour
  • 1 pinch of salt
  • 100 ml of water
  • 150 g of sugar

 Extra tip:
For a sweet topping just mix 2 tbsp powdered sugar with 3 tsp lemon juice or water.

Step by Step Instructions

Step 1

Mix the flour, baking powder and salt. In another bowl, use the hand mixer to beat the margarine and sugar until the two ingredients are well mixed.

Step 3

As soon as the dough is even, add the flour and use the hand mixer again.

Step 2

Now add baking powder, vinegar and lemon zest. Squeeze the lemon and keep stirring, while carefully adding the water.

Step 4

Spread the dough in the greased muffin tray or in paper molds and bake in the oven for 20 minutes.
