About this Recipe

Hi! This vegan burrito bowl is a creative way to eat Mexican food! You can decide what you want in your bowl. With my diverse options, there is something for everyone! I like that you can combine several things here to create a nutritious and exciting dish. 🌱Enjoy! 

Ingredients

  • 150g tofu
  • 1 tbsp mexican spices*
  • 30g tortilla chips
  • 3 tbsp guacamole (recipe)
  • 50g rice
  • 100g salad
  • 100g corn
  • 100g kidney beans
  • 1 small onion
  • 1 big pepper

You can use some guacamole (my recipe) or some salsa or vegan sour cream! Whatever you prefer 🙂

Extra tip:
This fillings are actually perfect in a wheat tortilla but I like eating it in a bowl because it’s easier to eat 🙂 But if you like you could make some wraps, filled with these ingredients.

Step by Step Instructions

Step 1

Fry the tofu with onions for 5 minutes in a pan and add the spices of your choice.

Step 3

Now wash the salad and prepare the guacamole for your meal. Don’t forget to cook the rice as well.

Step 2

Then add the washed corn and kidney beans, along with the paprika.

Step 4

Arrange the rice, tofu & salad, along with the tortilla chips in a medium to large bowl. 🙂 Enjoy!
