About this Recipe
Hi! Now these cookies are for all the chocolate-lovers out there! The triple-chocolate cookies from starbucks are crispy on the outside and lightly soft on the inside. That’s what I’ve been trying to do as well, just with a vegan version. This recipe can also be used as a basic cooky recipe, which can be varied with a lot more chocolate, sweets & toppings of your choice!

Ingredients
- 350g flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 100g sugar
- 240g brown sugar
- 1/2 tsp salt
- 225g softend vegan butter
- 1 tsp vanilla extract
- 8g linseeds
- 50g water
- 250g chocolate of choice
Extra tip:
I personally prefer them soft, with the melted chocolate chunks, that’s why I do not bake for long. If you would like them a bit crispy, just put it in the oven for a bit longer.

Step by Step Instructions
Step 1
Preheat oven to 150° C (350°F).
In a small cup mix the ground linseed with the water and let it stay for 15 minutes.

In a large bowl, whisk together the sugar, brown sugar, salt, and melted veg. butter until combined.
Step 3
Whisk in the linseed mixture and vanilla, until all sugar has dissolved and the batter is smooth.
Step 4
Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix.
Step 5
Fold in the chocolate chunks evenly. Chill the dough for at least 30 minutes. Scoop the dough onto a parchment paper-lined baking sheet. Bake for around 15 min.
